Introduction to stones and strops - Necessary equipment to maintain the sharpness and fine geometry over time.
I have collaborated with Maxim at Japanese Natural Stones to put together a starter kit which will include all the basic equipment you need to maintain my knives.
Kit Includes, JNS 300, JNS 800 and a leather strop. Also highly recommended is the JNS 6000 from the same site.
Part 1 - Setting the initial bevel on the edge of the knife.
Part 2 - Using finger pressure on the stone to thin into the edge, then gently blend the finish into the lower bevel.
Part 3 - Using a fine grit stone to further polish the edge and blend into the lower bevel.
When the geometry of the knife is where you want it, for a brief touch up if the feeling of sharpness is gone, start by giving the edge a strop, if the strop does not bring sharpness back, go to step 3 with the JNS600, after a few touch ups over time you should go back to the JNS 800 so the geometry is maintained blending the whole wide bevel.
